I wouldn't delete anything other than Launch Daemons and language packs because you get enough results by doing so. I would leave everything else alone.
We're already trying to fix something that isn't broke and if you try to fix it even more, you end up fu*king it up.

Only Engish. I could care less about the Emoji Icons so I deleted Japanese too.

After you restore, only delete daemons and langpack. Also, theme without winterboard.
This is what I did and my iPhone 3G is smoother than a fresh non-jailbroken/unlocked iPhone.
It's smoother and gets better battery than my friends iPhone that is stock with official carrier.
--- Update ---
After all said and done, a themed iPhone without Winterboard is the way to go.

I'm asking simplyb because I had the same problem a few days ago when I deleted English.
After a couple of restores and many hours of testing now I have very stable device.

Agree with you 100%!
Did you replace all the icons with custom ones?

No. I tried to by editing the Other.artwork file with the iPhoneshop tool but I wasn't able edit the appstore apps. You can change the other icons with no problem. I was able to change the notification pop-up boxes and everything.
I was even able to make the lockscreen key pad for the unlock passcode invisible for exctra security. LOL. I have a completely blank lockscreen with nothing but my wallpaper. People look at it and try to unlock but are like "What the fu*k! How do you get in this thing?!" LOL

I use Shrink, Bosspaper, Infinidock, 5x5 Springboard. Those are the things I use to customize my Springboard.

Do all these slow down your iPhone?
No. v2.6.6 is good and there was another version that was really smooth. (somebody help me out, it was the first version without a settings app)
Either one of the two will work fine. To be honest with you, the lag that everybody is talking about is minimum. I never complained about it. I just want the leak fix. A quick respring fix it. The leak in v2.6.6 without the use of the icon is minimum also. Don't worry about anything.
--- Update ---
^^^^^^^^^^^^I thought this was the RMF thread. LMAO!!!!!!!!
But no. Like I said. I was idling at 66MB on my iPhone 3G at one point.
--- Update ---
The bottom line is get rid of winterboard and useless daemons and language pack. That's all anybody really need to do.
