Some carriers don't allow their customers to edit the APN/EDGE settings (Setting > General > Network > Cellular Data Network).
But there is an easy way to enable this option. Simply follow my steps:

How to enable EDGE/APN Editing in settings:

1) Download plist Editor (for windows): http://www.mediafire...php?nmjljwdyymi or use any other editor which properly opens .plist files

2)
open a SSH connection to your iphone (with WinSCP/CyberDuck) and go to the following folder
/private/var/mobile/Library/Carrier Bundle.bundle/

note: you should be linked to the folder which has the name of your carrier. if not go to /System/Library/Carrier Bundles/ and find your carrier.

3) make a BACKUP of carrier.plist

4) download carrier.plist, open the plist editor from step 1 and open the carrier.plist inside the program

5) check if you can find
AllowEDGEEditing
5.1) if you find it, make sure it looks like this:
AllowEDGEEditing
note: if there is a below AllowEDGEEditing just change it to

5.2) if you cant find it, add:

AllowEDGEEditing
right below:

6) upload the edited carrier.plist

7) now you should find Setting > General > Network > Cellular Data Network

Very good tutorial, especially that sometimes the apn edit trick from Cydia doesn`t work.

Yes this method works reliably ;)
I prefer editing the files myself instead of installing somethin via cydia, because I know exactly what I've done.

Ok, Gonna make a shout out here. I have major issues with carrier whatever. I am running a 16gb White Iphone 3g jailbroken + unlocked with pwnagetool 3.1 and the 3.1 firmware and I am a t-mobile usa subscriber. I have never gotten cellular data networks to show up under my settings screen and then specifically general and then network, all I get is toggles for enable 3g, data roaming, vpn, and lastly wifi. I have installed both fakeapn and edit apn cydia apps from cydia and still no dice. No apn settings menu appears nor mms. in the iphone file directory under private/var/mobile/library I have only two bundle files. a Carrier Bundle.Bundle size zero kbs and a Operator Bundle.bundle no size listed via ssh. then in system/library/carrier bundles there are first off a bunch of numbered folders followed by all the various company and gsm provider bundles.
Can anyone help a fellow out. I've hacked the xbox 360, the ds, the psp, windows, mac, ipodtouches, and recently the iphone but this whole setting up apn settings and also hopefully mms settings has got me totally stumped. one final thing I'd like to mention. I don't have internet yet as part of my t-mobile plan just voice and unlimited texting. I could kiss the first person who can fix this issue or help me fix it, also with ultrasnow and 3.1 and iphone 3g i have signal bars but no logo, where do I edit to fix it something in plists or whatever?

"/private/var/mobile/Library/Carrier Bundle.bundle" isn't a file. It's a link to the carrier bundle which you are currently using.
You have to follow this link and you will be in the folder of the carrier settings you are using.
Then edit the carrier.plist like decribed above.

For me the folder links to "unknown.carrier" because my carrier doesnt exist.

I have even gone as far as reinstalling 3.1.2 3 times to no avail. I have tried installing the Tmobile carrier settings from Cydia as well as the APN settings download...still nothing... HELP! Thanks in advance :)

APN Edit procedure.

2) open a SSH connection to your iphone (with WinSCP) and go to the following folder
/private/var/mobile/Library/Carrier Bundle.bundle/

note: you should be linked to the folder which has the name of your carrier. if not go to /System/Library/Carrier Bundles/ and find your carrier.

3) make a BACKUP of carrier.plist

4) download carrier.plist, open the plist editor from step 1 and open the carrier.plist inside the program

5) check if you can find
Code:
<key>AllowEDGEEditing</key>
5.1) if you find it, make sure it looks like this:
Code:
<key>AllowEDGEEditing</key>
<true/>
note: if there is a <false/> below <key>AllowEDGEEditing</key> just change it to <true/>

5.2) if you cant find it, add:

Code:
<key>AllowEDGEEditing</key>
<true/>
right below:

Code:
<?xml version="1.0" encoding="UTF-8"?>
<!DOCTYPE plist PUBLIC "-//Apple//DTD PLIST 1.0//EN" "http://www.apple.com/DTDs/PropertyList-1.0.dtd">
<plist version="1.0">
<dict>
6) upload the edited carrier.plist

7) now you should find Setting > General > Network > Cellular Data Network

make sure the file name is the same as the original. If it's different it would not work.

I've tried adding this line to carrier.plist

<key>AllowEDGEEditing</key>
<true/>

and it works ok; however, when I restart my phone, I get a grey blank screen when I go to settings.app on my phone. I lost all tabs in settings. When I delete the line, all is normal.
