This has been tested on iphone 3GS FW 3.0.1 on iTunes 9.0.2 so im sure it will work on older itunes aswell.

here are the steps:
Once we have the .ipcc, we need to prep iTunes a bit for it to allows us to update the settings on our iPhone. Since Apple has blocked the easy straight forward way of doing it, we need to run a little command in command prompt (try Start > Run > cmd) will do the trick for now:

After doing this, start iTunes your normal way (and hopefully you had the sense to quite iTunes before running the above command) and let it detect your iPhone and make all the usual noises. Once everything settles down... 'Shift' + Click on the 'Check for Updates' button and a File-Open popup should appear:

If you don't see that option you have done something wrong... don't be afraid... just comment here and surely you will get the required push in the right direction.
Select the .ipcc and hit 'Open.'
[NOTE] - this next step i didnt have to do cuz im on ATT but you may have to
You should immediately see the Settings > General > Network > Cellular Data Network option open up. Go into it and enter your appropriate MMS settings (MMSC and MMS Proxy IP : Port)
After that, repeat the above updating procedure again... selecting the same .ipcc file in the same exact way. Only takes a couple of seconds really.
after running the cmd promt commands just open itunes (tested on 9.0.2 myself) and shit+update and then youll have the extra option in the drop down menu for .ipcc files. just select the one you have downloaded and your all set =) reboot phone and now you should have mms in your default messages app without upgrading firmware.
