Ok, try disabling CyDelete, and/or MultiIconMover. Those might screw with it.
EDIT: CONGRATS ON THE 1000th POST!!

The solution for this is to change it to the option you want to use and hit apply (resprings itself). Then go back in and turn off "enable iconoclasm" (resprings itself). Then go back in and turn it back on (resprings itself), and it should work.
Never had any springboard crashing issues, so this trick is probably no help for those. 32GB 3GS oldbootrom iOS4.0 via PwnageTool 4.01. My mobile substrate addons include:
Activator, Backgrounder, DisplayStack, FiveIconDock, IconSupport, IntelliStatusIconsV..., LibWeather, LockInfo, LockInfoMail, LockInfoPhone, MyWi, PreferenceLoader, Unrestrictor3G-itunes, Unrestrictor3G, Winterboard, biteSBarClient, biteSMSsb, libhide, libstatusbar, removerecents. (sweet jesus that's a lot).
EDIT: Just noticed that in addition to mostly scattering my icons about, it also changed some of the icons I had in my one folder and renamed it to a default name. Good news is I was able to move icons in and out and rename just fine, so everything seems to be in working order. Sucks for those with tons of folders and tons of folder-ed icons, though.

I'm getting the same problem, but opening folders doesnt actually crash my SpringBoard, it just shows my wallpaper and statusbar and i can just press the home button and it will return to my 3x3 layout.

Yeah. Seems to only be the 3x3 layout.
Though I didn't know pressing home returned to SB.

I had the same problem. It was because I have too much apps in my folder. If your folder have 8 or less apps it should work.

Works fine for me on my 4.01 iPhone 4. Using the 5x5 layout. Folders work just fine too, although they are still limited to 4 icons per row. Dunno why you're having trouble, but don't tell everyone with an iPhone 4 to stay away just because you can't get it working on yours.
